If Your Food Is Upside Down, Make Sure Your Staff Is Stand Up

If Your Food Is Upside Down, Make Sure Your Staff Is Stand Up

When is a salad upside down? Have you ever thought of serving one? Are they even that appealing? These are interesting questions considering the world is going green.

It is also going upside down. Everything in it appears to be fitting into this category. If we pan to the real estate market, many homeowners who triumphantly moved bag and baggage into a new abode hardly had time to unpack before the value of their homes plummeted below their purchase price.

The same holds true for many car owners. Buying a vehicle at sticker price almost assuredly signifies you will have to pay more for the car than what it will be worth one year after you drive it.

Those are expected. But upside-down salads, please. Strangely, I came across this somewhat new, albeit weird phenomenon, last Friday evening as Kranston and I stopped to have a quick bite to eat at Sonoma‘s Big Three Diner. The Big Three is the casual restaurant playing host to those guests that spa at The Fairmont Hotel in the midst of Sonoma County wine country. The diner is a strange combination of hotel retail, pastry dessert case and above average hotel coffee shop food. Actually, its tremendous food all freshly prepared and served with a four star hotel style. Yet, on this particular night the baby spinach salad with goat cheese, granny smith apples, candied pecan and grilled chicken was a complete surprise. The reason being is that all of the ingredients of the salad were placed on the late first. The spinach was the tossed in the dressing and placed on top.

The weirdness of this presentation was that the salad looked like a bunch of tossed spinach. The goat cheese stuck to the plate since it probably came from under the heat lamp, and the granny smith apples were diced to the point of extra labor costs.

The key to the situation, and the point that the salad even made this column was the expert way the entire staff dealt with the problem.

When brought to their attention, they all claimed that was the way the salad was served. It wasn’t until I suggested that the chef instructed the salad maker to create the salad this way and then flip it over so the ingredients, color, and presentation were all on the top of the spinach, that someone admitted the kitchen staff was new.

That of course is what we all face- the fact that eventually somebody in the kitchen will make a mistake, or worse, decide that there is a better way to make either this or that.
In the Fairmont arena, I couldn’t ask for more attentive waiters, bussers, or managers on duty. They each addressed the problem with complete professionalism and took the criticism with what appeared to be sincere interest.

The lesson here is worthwhile. The room isn’t outwardly attractive, and although better than average, the real reason for going back to The Big Three Diner is because of the service. It starts when you walk in the door and lasts throughout the meal. So whether you are a guest or a local you are treated with a four star attitude.

While explaining the art of salad making, I did at times toss the cordiality out the door; yet, the staff was accepting of the advice and had the perfect answers regarding style, technique and menu interpretation. They even suggested the next time I order the salad I ask that it be “tossed”. What a concept.

I doubt I anybody instructed anyone in the kitchen to build an upside down, goat cheese melting on a warm plate, salad. Yet, as long as the staff handles the complaints as well as they did while the new kitchen gets up to speed, the customers will surely come back. The salad was definitely upside down and the kitchen was getting slammed, but the dining room staff rose to the occasion and kept the restaurant from sinking. And that’s what it’s all about.

To Franchise or Not to Franchise

To Franchise or Not to Franchise

Ask a Franchising Question?

Send AllBusiness a Confidential E-Mail
I’ve had quite a few business associates encouraging me to franchise my retail business. How do you really know if that’s a good idea?  Is there a profit sign-post?  Or?

I believe that there are a multitude of elements that go into (or should go into) the decision to franchise or not franchise a business.

The first is always whether there exists a business ‘system’ that can be replicated over a number of other locations under the direction of various owners or managers beyond the founder. This not only means the obvious, meaning ‘has the entrepreneur built a ‘teachable’ business’, but also is the business one that can survive (with reasonable assurance) beyond the founder’s location or regional appeal? (Many ‘destination’ establishments are conditional upon look, style, or ownership, and are not good franchise candidates. A famous food destination with specific neighborhood appeal would be a good example.)

Of course, beyond the capacity for repetition, there are elements of ‘franchise feasibility’ such as timeliness of the concept, financial returns, and personality.

Above all else, franchising is a method of distribution, and the question to be answered is whether or not ‘franchising’ is the best alternative to other means of distributing the business’s products or services.

These issues would be a good start for considering the franchise alternative, but there are many others.

Although some time has passed and global economy seems to show signs of improvement, the recession affected all of us badly. Those who were lucky enough to keep their jobs had to suffer from having their paychecks reduced, while those less fortunate lost their jobs and means of supporting their families altogether. However, since then the market has been thirsty for economic rejuvenation, and there is now lots of room for improvement, and for new businesses as well. Thus, side businesses can be a good idea for those who were left unemployed, but for those who need some extra cash as well.

In order to help you get started, we are going to show you some side business ideas that anyone can start, and which can be very profitable. These side business ideas won’t make you rich that’s for sure, but anyone who has some spare time can get involved, and perhaps make money from a special skill or talent they have, or from doing something they actually enjoy. Perhaps this is the opportunity you needed to put an older plan into practice; thus, from the safety of your monthly fixed income, you can find the resources to start up a small business. The following ideas are relatively easy to start; most of them don’t require much or any start-up money or an office space, and you can have them under sole proprietorship. Some of them may require some accreditation or certificates, but these should be easy to acquire.

That being said, here are some side business ideas; hopefully, each reader will be able to find something that suits them among them. We should also mention that many of them are perfect for college students that worry about paying of their loans or making some extra pocket money.

Babysitting – This is one of the classics; most of us have already done this, either for money or for younger brothers, sisters or relatives. You don’t need any special skills, just being good and patient with children. It would help a lot if you have recommendations from other parents, otherwise all you have to do is put an ad in the paper, or on the Internet and wait to be called for an interview. There are also special agencies which do background and health checks and make sure only the fittest and most balanced people get to be represented by them. While you will have to pay them a commission, your jobs are practically ensured for you because you get official recommendations.
Auto detailing – This sounds fancy, but you’ve also probably done it already if your dad made you wash his car every Sunday. Again, you don’t need any certification, just a couple of bucks to invest in detergents, sponges and other types of brushes. While you would generally need a space designed for the exterior and interior cleaning of cars, certain customers will be happy if you go to their homes. You could, for example, specialize in washing and cleaning the interiors of cars.
Blogging – Already quite an expanded market, blogging can provide you with numerous advantages. However, you have to make sure you’re writing about something that interests people, and that you have a way with words. There are already hundreds of thousands of blogs out there, so people aren’t going to waste their time on a blog with grammatical errors and poor content.
Manufacturing – Because everything is now globalized and standardized, many people feel the need to turn towards things with a more homey feel and aspect. This means you can use your various skills to create something unique and beautiful. You can bake and decorate cupcakes and cakes, you can learn to make earrings and jewelry, you can knit scarves, sweaters or gloves, you can learn to make candles, candy, cookies and so on. Depending on what you’re good at, you can offer cheaper services. You could, for example, offer computer assistance, and most of the times you won’t even have to leave your home.
Personal trainer – If you’re athletic and you know a lot about exercising, fitness and nutrition, you can become someone’s personal trainer. That way, you will get paid to do what you normally do: work out and look good, while also encouraging others to lead healthy lifestyles.
Dog walker – Walking other people’s dogs is another common and lucrative business, and it is probably one of the easiest side business ideas to achieve. If you know of some neighbors who need someone to look after their dogs you can offer your services, and if you already like animals you will also have fun.
These side business ideas are so simple and effective that anyone can perform them. If you didn’t find a suitable one, perhaps they inspired you for something else; moreover, we shall come back with a second article on the subject in the future, and show you other side businesses that you could have.
